Beetroot oat risotto
This lovely dish can be your morning porridge or your risotto or your side dish, depending on the time of the day you have it. I cooked it for my morning breakfast, but then made is as a side dish with some grilled vegetables.
Ingredients
- 50g oat groats (these are not oat flakes or jumbo oats, these are actual oat grains that look a bit like a rice grain)
- 1 small beetroot, grated
- 1 cm grated ginger
- 1.5 tsp of tamari
Method
- soak your grains a night before
- in the morning, rinse well and poor some fresh water so that it covers oats
- add grated beetroot and ginger
- boil and simmer for 15 minutes
- once boiled, drain any remaining liquid
- add some tamari to taste
