Broccoli omelette

What do you do when someone unexpectedly visits you for lunch? You make an omelette, of course!  I always have eggs in my fridge and another thing that I seem to always have is broccoli.

For this recipe you will need a frying pan that can go in the oven, i.e. the one with a non plastic handle.

Ingredients

  • 5 eggs
  • small head of broccoli
  • 1 courgette
  • 1 tsp turmeric
  • salt, pepper to taste
  • 1 tsp ghee

Method

  • preheat your oven to 180C
  • wash and trim your broccoli
  • cut courgettes into 1 cm rings and gently fry both sides in the pan
  • mix your eggs with salt, pepper and turmeric and when courgettes are golden, poor the eggs on top of courgettes
  • place broccoli randomly on top
  • place the lid
  • the pan goes into oven for 15 min

That’s it. Nothing else to do. Serve with whatever salad you have.
