grilled peaches & feta salad

You know summer has reached its peak when peaches land in your organic fruit and veg delivery box. If you never tried grilling peaches, you are in for a surprise. Grilling them quickly on both sides adds that soft honey like syrupy flavour that makes the whole meal bursting with flavour. This salad only takes 5 minutes and is a great breakfast alternative in summer.

Ingredients (for 1 person)

  • 1 peach
  • 60g feta cheese
  • green salad leaves
  • any other berries (I used here pomegranates, but blueberries would work equally well too)

Ingredients for the dressing

  • 1 tbsp of extra virgin olive oil
  • 1 tsp balsamic vinegar
  • 0.5 tsp honey (optional)

Method

  • slice the peach into half moons and place in a hot grill pan, grilling each side for 1-2 minutes
  • for the dressing, whizz all ingredients together in a small bowl
  • place salad leaves first, followed by the peaches, then feta and berries. Finally, sprinkle some dressing on top
