baharat chickpeas

Baharat spices are a wonderful aromatic North African spice blend, consisting of cinnamon, cloves, cumin and black pepper. You can mix these ingredients yourself or just buy pre-made.


  • 240g chickpeas (either 1 drained can or cooked)
  • 1 brown onion – finely sliced
  • 1in ginger – grated or finely chopped
  • 180g cherry tomatoes – halved
  • 50g dried apricots – chopped
  • 80g spinach
  • 1 tbp baharat spice
  • olive oil
  • parsley or coriander and toasted flaked almonds to¬†garnish

Ingredients for cream sauce

  • 20g creamed coconut
  • 40 ml water


  • fry the onion in little olive oil until soft – 5 min
  • add baharat spice mix, coat and fry for 1 more min
  • add chickpeas, tomatoes, apricots and spinach, cover and cook on low for 10 min
  • dissolve creamed coconut in hot water to form a sauce

Serve with brown or wild rice. Drizzle with cream sauce, fresh herbs and flaked almonds.
