Banana Pecan Bread

This high protein gluten free bread makes a great breakfast or snack option. Serve it warm or toasted with some butter or coconut oil.


  • 300g pecan nuts
  • 1tsp lemon juice
  • 1/2 tsp baking soda
  • 1tsp cinnamon
  • 4 free range eggs
  • 1 large or 2 small ripe banana
  • 2tbsp extra virgin olive oil


  • grind pecan nuts into flour
  • place in a bowl with other dry ingredients
  • place remaining ingredients into blender and process till smooth
  • poor into dry ingredients and mix
  • bake at 180C for 45-50 min until firm to touch
  • allow to cool for 5 min before taking out of the tin
