Beetroot oat risotto

This lovely dish can be your morning porridge or your risotto or your side dish, depending on the time of the day you have it. I cooked it for my morning breakfast, but then made is as a side dish with some grilled vegetables.


  • 50g oat groats (these are not oat flakes or jumbo oats, these are actual oat grains that look a bit like a rice grain)
  • 1 small beetroot, grated
  • 1 cm grated ginger
  • 1.5 tsp of tamari


  • soak your grains a night before
  • in the morning, rinse well and poor some fresh water so that it covers oats
  • add grated beetroot and ginger
  • boil and simmer for 15 minutes
  • once boiled, drain any remaining liquid
  • add some tamari to taste
