Beetroot hummus

What do you do when you have a lonely beetroot lurking in the fridge? You make hummus, of course!


  • 1 small beetroot – raw, chopped
  • cooked or canned chickpeas – 240g
  • 2 tsp horseradish
  • 1 tbsp tahini – sesame paste
  • juice of one lemon
  • salt, pepper
  • za’atar spice blend (optional) – 2 tsp
  • half glass of water


  • place all the ingredients in the blender except for water
  • once mixed up, slowly add the water to get the consistency you desire

Serve with anything – oatcakes, crackers, raw or cooked vegetables, bread. I always sprinkle some extra za’atar on top, just love this spice blend.
