Breakfast waffles


Some weekend morning are just perfect for slow start, long lie-ins and beautiful food. Mind you, these waffles are very quick to make and are to be enjoyed one bite at a time.


  • 3 eggs
  • 3 tbsp chickpea flour, also called gram flour
  • 1/2 tsp baking power
  • 2 small/2 medium bananas
  • optional: 1 tsp cinnamon, 1/2 tsp vanilla
  • 1 tsp coconut oil


  • whizz the eggs together with baking powder (I do mine in vitamix)
  • add other ingredients and blend for another minute, to incorporate everything

Poor into you waffle maker, or you can fry in the pan.

Makes 4 generous pancakes.
