oven baked courgette chips

These courgette chips are a fantastic replacement for when you want something light and juicy to accompany your meal.


  • 4 courgettes, cut into half and then quarters
  • 50g grated Parmesan cheese (I buy a block and make crumbs in the Vitamix, that way the cheese is still fresh and moist)
  • any herbs that you have (I used 1/2 tsp chillies, 1 tsp ground oregano, 1 tsp dried basil, 1 tsp dried tarragon, 1/2 tsp dried garlic)
  • 2 tbsp olive oil


  • take out the grill shelf from your oven, lightly brush it with olive oil and place on top of the grill tray, lined up with greaseproof paper
  • poor the olive oil on courgettes and mix all up to be coated
  • in a separate bowl mix parmesan and the herbs
  • gently toss the mixture through the courgettes, do not overmix to prevent clumping
  • place your courgettes on top of grill shelf, soft side up
  • bake for 15 minutes at 180C, at the end grill on high for additional 2-3 minutes

Can be serve hot or cold. Delicious on their own or with protein of your choice. Enjoy!
