Golden millet carrot porridge

If you are feeling under the weather, like I was, this golden porridge will sort you out. When I am coming down with something, I always look for ways to eat more garlic, ginger and chilli. And this porridge hits all the spots!

Porridge ingredients

  • 80g millet (preferably soaked overnight, cooks a lot easier in the morning, and soaking gets rid of the phytates)
  • 300 ml of water
  • pinch of salt

Boil the water and and then reduce heat, simmering for about 20 min. Take off the lid for the last 5 min and increase the heat a little bit to let the water evaporate.

Golden sauce ingredients

  • 2 carrots
  • 0.5 lemon juice
  • 1 clove garlic
  • 1 in ginger
  • 1 tsp peanut butter
  • optional – 3 slices of dried mango, if you have any

Put everything in your blender (I use Vitamix) and blend until smooth.

Mix in the sauce into the porridge. Sprinkle with toasted cumin, chilli flakes and coriander.

This porridge is so warming and soothing, it really makes you feel good! Enjoy.
