Peanut butter banana millet porridge

The most important thing about your breakfast is not to have the same thing every day. That way not only you will not be bored but you will also be consuming different nutrients each time. I rotate my porridges between oats, millet, buckwheat and quinoa, and throw in some eggs, pancakes or a smoothie in between.

This porridge is so delicious, that I ended up having it a few days in a row before moving back to my rotation. It’s creamy, satisfying and filling. Everything you need from a good breakfast.

  • 5tbsp of dry millet per person
  • banana
  • peanut butter

  • soak your millet overnight
  • in the morning, rinse it well under cold water, add to the pan and pore some fresh water on top inch above your grains
  • boil on high and once it has boiled, reduce to low and simmer for about 20 minutes
  • drain the remaining water

Mix with a teaspoon (or tablespoon if you wish!) or peanut butter per per person. Add some banana and sprinkle with cinnamon. I do not tend to add any sweeteners in the morning, but a drizzle of honey or maple syrup would work very nicely here.
