Pomegranate chicken

My Turkish friend told me about the pomegranate molasses years ago. Apparently, in Turkey they use this a lot! In salads, marinates, meat, desserts and anything else that can cope with this delicious sweet and sour flavour. So I decided to make a very simple marinate for a very ordinary chicken breast, and it worked a treat.


  • x2 free range chicken breasts
  • 1 tbsp pomegranate molasses
  • 1 tsp ground cumin
  • 1 tsp olive oil
  • salt and pepper to taste


  • preheat oven to 200C
  • whilst oven is getting hot, marinate your chicken in the mixture made from all the above ingredients
  • place marinated chicken breasts on a baking tray and cook for 25 min. For the last 5 minutes turn on the grill

I also made a dressing from the last 4 ingredients, just added a dash of lemon juice and drizzled around on my plate. Sprinkling of walnuts also goes very well with flavours here and ads a bit of extra crunch.

That’s it. Simple, delicious and quick.
